Provolone. Originating in southern Italy, provolone is a semi-hard cheese made from unpasteurized cow’s milk. It is a type of pasta filata cheese, meaning that the curd is stretched during the cheesemaking process. Provolone has a pale yellow to white color and a slightly sharp, nutty flavor. It comes in a variety of flavors, such as sweet, spicy, and smoked.
